Spicy White Milk Curry

Made in the frying pan

  • 1. Peel and cut one potato into eight equal pieces and soak in water. Peel and cut the carrot into round slices and the onion into wedges. Place the chicken in a Ziplock bag and season with salt and pepper.

  • 2. Pour the water and consommé in the frying pan and heat. Bring to a simmer, then add all the vegetables, place a piece of parchment paper directly on top of the mixture and cover with a lid. Cook over medium heat for 10 minutes, until the carrots and potatoes soften.

  • 3. Add the chicken, place the piece of parchment paper over the top again and cook for 5 minutes.

  • 4. Remove the drop lid (parchment paper) and simmer down the liquid.

  • 5. Add the milk and cook over medium heat, stirring the bottom, until thickened.

  • 6. Dissolve the green curry paste into the mixture and stir well.
